Aloo cheela, a popular Indian pancake made with potatoes, gram flour, and spices.

Ingredients:

  • 2 medium potatoes, peeled and grated
  • 1/2 cup gram flour (besan)
  • 1/4 cup cornstarch
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 green chili, finely chopped
  • 2 tablespoons chopped cilantro
  • 1 tablespoon oil, for cooking

Instructions:

  1. In a large bowl, combine the grated potatoes, gram flour, cornstarch, cumin seeds, salt, pepper, green chili, and cilantro. Mix well.
  2. Heat a griddle or frying pan over medium heat. Add a small amount of oil to the pan.
  3. Pour 1/4 cup of the batter onto the hot pan. Spread the batter out into a thin circle, about 6 inches in diameter.
  4. Cook the cheela for 2-3 minutes per side, or until golden brown and cooked through.
  5. Repeat steps 3-4 with the remaining batter.
  6. Serve the aloo cheela hot with your favorite chutney or sauce.

Here are some tips for making aloo cheela:

  • Make sure to squeeze out as much moisture as possible from the grated potatoes before adding them to the batter. This will help to prevent the cheela from becoming soggy.
  • If the batter is too thick, add a little bit of water until it reaches the desired consistency.
  • Don’t overcrowd the pan when cooking the cheela. This will prevent them from cooking evenly.
  • Be careful not to overcook the cheela. They should be golden brown on both sides, but still soft in the middle.

Aloo cheela is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It can be served plain or with your favorite chutney or sauce.
